Wife's gone and left me (for the weekend). so, I stirred up a big batcha my favoritest thing to do with a grouper: put BBQ sauce on it! like this:
take my pretty grouper, chop him into bite-sized pieces (mind they'll shrink a little in cookin, so i don't cut too small).

roll him in some store-bought seafood breader

heat a big non-stick fry pan over medium-high heat, and splash in enough veggie oil to thinly cover its bottom

gentlelike, put mr fish in the pan and then cook him fer a few minutes, until the breading gets nice and delicious brown, deep gold. then flip im around and give another few. get all the brown on him that he'll take but don't get crazy and overcook im.
and as soon as that last brownin's done, turn the heat down low, grab mah jar a Bone Suckin Sauce and drizzl over just enough to coat the topside of mr grouper

now let that sizzle for just a few seconds. like 20. this sauce is sweet and will turn into hard black shit jusslikedat! so . fer fuck's sake! don't let him burn!
and then just give it a little stir. soft like so ah don't smash the pretty fishes up. just get some of that little-bit-darker-now sauce all over.
put it next to something else that's delicious. let em make pretty babies in mah belly!

that's it! takes like 10 minutes, all the way through. can't even get a beer down, it's so quick.
i don't know if any other BBQ sauce would work. Bone Suckin Sauce is not a smoky 'western-style' BBQ sauce, it's a sweetish tomato-based BBQ sauce. but not sweet-n-sour, like some can be. it's awesome though. get it if you can. the 'hot' flavor is even better.
