1) Texas doesn’t even cook the right animal, so they’re out of the running before they start.
2) North Carolina style bbq is the foulest stuff on the planet. Memphis style is the one true bbq. In memphis there is no need to google for bbq. It is all around you. It is in the air. It is in you blood.
All the locality stuff with Barbecue is a bit lost on me who has never been south of Virginia…. I do know one of my favorite places to eat was the (late, lamented) Pearson’s Texas Grill in Queens which people who seemed to know what they were talking about described as the real thing, but also that what I usually ate there was called North Carolina Pulled Pork. So make of that what you will.
there are many different Carolina BBQ styles. but the classic (vinegar + pepper) is the best. add ketchup, and you get “Lexington” style that’s popular in the west. add mustard and you get the evil South Carolina version.
we’ve been enjoying South African Peri Peri sauce lately, though. marinate some chicken thighs in this, then grill till the fat’s melted. yum. yum.
